(with a regular blender you need to wait until the food has cooled, otherwise steam
build up in the jar can be dangerous). Top of the range blenders, such as
Braun's Multiquick Professional, will even crush ice. Others come with a small
bowl and chopping blade, so they can handle mini jobs such
as chopping herbs or spices and processing breadcrumbs.[1]
The versatile stick design of the Cuisinart hand blender smart stick lets users
blend ingredients right in pots, pitchers, bowls, or the clear plastic beaker

With their propeller style blades and tall jugs, these are designed to liquidise.
Think cocktails, smoothies and frappes. Most come with a choice of variable speed
control and a `pulse' option that lets you control the motor at the touch of a finger.
What makes a good blender? Better quality products have more powerful motors and
sturdy blades, so they can cope easily with tough ingredients, such as ice cubes.
"The best blenders also have a glass jar, though many offer toughened plastic,"
says Lara Hogg, electrical buyer for Peter's of Kensington in Sydney. As with all
appliances, check how easy they are to pull apart, clean and reassemble.[1]
A blender is permanently plugged in at my house for blending fruit into
smoothies, pureeing vegetables into soups and crushing ice for drinks. I find it blends
more smoothly than a food processor. If you can't have both, buy a food processor cuisinart blender
with a blender attachment or a hand held blender instead.
The best quality blenders use around 350 500 watts and have up to five speeds,
including ice crushing plus a 'pulse' button. A pulse function keeps ingredients moving.
The container should hold around 4 7 cups. I prefer tempered glass to stainless steel
so I can see what's going on.
The base should be wide and heavy. Around 3 5 kilos will help prevent it from
bouncing when pureeing really thick foods. The blades should be made of stainless steel.
Rubber or plastic seals should always be used to stop leaks. Make sure the lid seals
tightly and has a removable section for adding extra ingredients and allowing steam
to escape when blending hot liquids.[2]
